Fruits and Vegetables May Cut Arthritis Risk

Study results suggest that some dietary carotenoids, including beta-cryptoxanthin and zeaxanthin, may lower the risk of developing arthritis. Beta-cryptoxanthin and zeaxanthin are found in yellow and orange fruits and vegetables. Researchers suggest that just modest intake - the equivalent of one glass of freshly squeezed orange juice per day - may cut the risk of arthritis.
